Crunchy Snap Beans

This week snap beans are coming on the scene! As a mix of green, yellow and even a few purple snap beans are a favorite of mine. There are many ways to enjoy this summertime treat, try your snap beans sauteed with butter and herbs, added to salad or eat right out of hand.

Starting last week baby leeks began coming in. Leeks are the perfect in between of scallions and onions! Leeks can be used in any dish that you would use onions in, some of my go to’s are potato and leek hash, soup and as a topping for scrambled eggs. You can even use the greens! Just throw them into a zip lock and freeze for the next time you make soup, add them to broth to give it a delightful onion flavor.

When most people here the word “turnip” they imagine a very underrated root vegetable made into side dishes politely ignored, not the light, crunchy treseure that is hakurei turnips.

Hakurei turnips are a white salad turnip, known for crisp texture and zesty flavor. Hakurei turnips can be used just like radishes to add extra tasty bits to salads, sandwiches or bring your summer crudite to a new level. Don’t forget the greens! Hakureis sport lovely tender greens that can be added to anything you would use kale in. They add extra sparkle to ramen and summer rolls.
