A New Adventure
Welcome to the very first season of Dirty Knees Farm CSA!
I am looking forward to sharing all the farm has to offer this year. Together we will explore many colors, flavors and new dishes, I can’t wait to share all of my favorites with you.
This week you will be getting all the veggies you need for add-ins to your favorite salad, spring stir fry or pasta salad. Both the swiss chard and kale are so tender this time of year you don’t even need to cook them! Try them with the ramps as a salad or chopped thinly and added to sandwiches or wraps.
As we journey through the seasons together you can look forward to spring greens with salads front and center, to summer favorites like cucumbers, summer squash, and basil. In the garden right now I am excitedly watching the heads of lettuce grow more everyday, as well as scallions and garlic scapes that will be ready to be made into delicious pesto, salads for lunch and tasty breakfast toppings before we know it.
Have you heard of ramps? Ramps are a type of local wild onion. Unique to the north east ramps are only found in a very specific forest habitat, treasured by home cooks and chefs alike for their singular flavor and limited season ramps are a spring favorite. They have broad tender leaves with beautifully mild bulbs. Normally ramps only have a 4-6 week window when you can sustainably harvest without harming the patches they grow in, but due to our slow and dry spring this year we where able to harvest one more time and share this amazing foodie treat with you.
